On Saturday, Jason and I went to the annual Lions Club Pancake Festival. Lubbock has been in a competition to break the Guinness Book of World Records on most pancakes served in 8 hours. Lubbock held the title in 2002 with 30,724 pancakes served. Last year, a Kiwanis Club in Fargo, N.D. set the record at 34,818 pancakes. This year, Lubbock broke the record by serving 66,459 pancakes!
In the local newspaper, it said that State Rep. Delwin Jones of Lubbock, a Lions Club member, said he and State Rep. Carl Isett will introduce a resolution to the Legislature this week designating Lubbock as the "Pancake Capital of the World." Delwin Jones said the resolution would also recognize the Lubbock Lions Club as the "World Champion Pancake Lions Club of the World."
So, it's interesting to me that Jason and I live in the "Pancake Capital of the World." Pretty random!

Lex & I made pancakes this morning for breakfast. 5 pancakes served in 30 minutes! LOOK OUT LUBBOCK LIONS CLUB...the Dooleys are on your tail!
